詳細「ざおう食堂」の地産地消への取り組みが河北新報に掲載されました
2026年8月28日付の河北新報に、9月1日のグランドオープンを控えた「ざおう食堂」と、地元農家の皆さまと進めるメニュー開発の取り組みが掲載されました。

との見出しで、8月23日に開催した地元農家の皆さまとの意見交換会が紹介されています。
地元農家約20人が、ざおう食堂の料理を試食
意見交換会には、蔵王町内の農家を中心に約20人の皆さまが参加しました。
参加者の皆さまには、ざおう食堂で提供を予定している定食を実際に召し上がっていただき、料理の味や構成、地元産農産物の活用方法について率直なご意見を伺いました。
会場では、
「夏限定で、蔵王産トウモロコシの炊き込みご飯を提供してはどうか」
「キュウリやナスの漬物であれば、地域で収穫された野菜を保存しながら活用できる」
など、日頃から農産物を育て、その特性を熟知している農家の皆さまならではの具体的な提案が寄せられました。
食堂側だけでメニューを考えるのではなく、生産者の知恵と経験を取り入れながら、蔵王らしい食を一緒につくっていく。今回の意見交換会は、その第一歩となりました。
「なるべく地のものを使いたい」
河北新報の記事では、ざおう食堂の大宮有紀也店長の言葉も紹介されました。
「町内で作られているとは知らなかった農産物もあった。なるべく地のものを使いたいので、これからも吸収したい」
蔵王町には、米、野菜、果物、畜産物をはじめ、豊かな自然環境の中で育まれた多彩な食材があります。
しかし、生産者と飲食店、地域住民、観光客を結ぶ仕組みがなければ、その魅力を十分に生かすことはできません。
ざおう食堂は、地元産の食材を単に仕入れて提供するだけの飲食店ではなく、農家の皆さまから食材の特徴や調理方法、保存の知恵を学び、メニューとして形にし、地域の皆さまや旅行者へ届ける場所を目指します。
空き店舗を、地域の食と交流の拠点へ
ざおう食堂は、蔵王町小妻坂地区の県道沿いにある空き飲食店舗を改修して誕生します。
使われなくなった建物を解体するのではなく、もう一度人が集まる場所として再生することも、ガイアグループが進める地域づくりの一つです。
空き店舗に新たな役割を与え、地域の農産物を使い、人が働く場所をつくり、住民や旅行者が食卓を囲む。
一つの建物の再生が、農業、飲食、雇用、観光、交流へとつながり、地域の中に新たな循環を生み出していきます。




地産地消を、地域経済の循環へ
地産地消の価値は、移動距離の短い新鮮な食材を味わえることだけではありません。
地域で作られた農産物を地域の飲食店が使い、地域住民や旅行者が料理として味わうことで、消費が生産者の所得へつながります。さらに、飲食店の雇用や新たな商品開発、観光客と地域住民の交流へと広がっていきます。
また、規格や収穫量などの事情で通常の流通に乗りにくい農産物も、漬物、総菜、炊き込みご飯などへ加工することで、新たな価値を持つ食材として活用できる可能性があります。
農産物を無駄なく生かすことは、食品ロスの削減にとどまらず、地域の農業を支え、持続可能な食の仕組みを育てることにつながります。
農福連携を、食堂の日常へ
ガイアグループが進める「蔵王福祉の森構想」は、
「誰もが安心して暮らすことができる地域」
「誰もが地域の中で役割を持つことができる社会」
の実現を目指す地域づくりの構想です。
ざおう食堂では、地元農家との連携に加え、農業と福祉を結ぶ農福連携、地域食材の加工、飲食店での仕事づくりなどを通じて、さまざまな人が地域の中で役割を持てる仕組みへと発展させていきます。
農産物を作る人、運ぶ人、調理する人、接客する人、食べる人。
それぞれの役割が食卓を中心につながることによって、日常の飲食店が地域福祉と地域経済を支える拠点になります。
「ざおうでつながる店」へ
ざおう食堂が掲げるコンセプトは、
「ざおうでつながる店」
です。
地域住民、農家、福祉事業者、別荘利用者、移住者、地域で働く人、そしてGAIA Resortを利用する旅行者が、食を通じて自然に出会い、交流できる場所を目指します。
旅行者にとっても、地元の食材を使った料理を味わうことは、その土地の暮らしや文化に触れる大切な宿泊体験です。
食事を提供して終わるのではなく、料理の背景にある生産者の思いや、地域の季節、蔵王で暮らす人々の物語まで伝えていく。ざおう食堂を、地域と旅行者を結ぶ交流拠点として育ててまいります。




9月1日、グランドオープン
ざおう食堂は、2026年9月1日にグランドオープンします。
- 所在地:蔵王町遠刈田温泉字小妻坂71-1
- 昼の部:午前11時~午後3時
- 昼の部ラストオーダー:午後2時30分
- 夜の部:午後5時~午後11時
- 夜の部ラストオーダー:午後10時
昼は地元食材を生かした定食を中心に、夜は居酒屋メニューをご用意します。
農家の皆さまからいただいたアイデアを大切にしながら、季節ごとに蔵王の味を楽しめるメニューづくりを進めてまいります。
地域の皆さまとともに育てる食堂
ざおう食堂は、完成した店を地域へ提供するのではなく、地域の皆さまの声を取り入れながら、ともに育てていく場所です。
地元農家の皆さまをはじめ、今回の意見交換会にご参加いただいた皆さまに、改めて心より御礼申し上げます。

Zao Shokudo’s Farm-to-Table Initiative Featured in The Kahoku Shimpo
The Kahoku Shimpo published an article on August 28, 2026, introducing Zao Shokudo, which is scheduled to celebrate its grand opening on September 1, and its collaborative menu development with local farmers.
The print edition carried the headline:
“An Abundance of Zao Flavors — New Restaurant to Open in Togatta on September 1”
The online edition introduced the project under the headline:
“Making Active Use of Zao Ingredients — New Restaurant to Open in Togatta on September 1, with Menus Developed Together with Local Farmers”
The article covered a tasting and discussion session held on August 23 with farmers from Zao Town.
Around 20 Local Farmers Taste the Zao Shokudo Menu
Approximately 20 people, primarily farmers from Zao Town, participated in the session.
They sampled set meals planned for Zao Shokudo and shared their honest opinions about the flavors, menu composition and potential uses of locally grown produce.
Suggestions included:
“Why not offer rice cooked with Zao-grown sweet corn as a seasonal summer dish?”
“Cucumbers and eggplants could be made into pickles, allowing locally harvested vegetables to be preserved and served when needed.”
These practical ideas came from farmers who grow the produce themselves and understand its characteristics throughout the seasons.
Rather than developing the menu entirely within the restaurant, Zao Shokudo aims to create food that reflects the character of Zao by incorporating the knowledge and experience of local producers. This session marked the first step in that process.
“We Want to Use as Many Local Ingredients as Possible”
The Kahoku Shimpo article also featured a comment from Zao Shokudo Manager Yukiya Omiya:
“There were agricultural products being grown in Zao Town that I did not know about. We want to use as many local ingredients as possible, so I hope to continue learning from everyone.”
Zao Town produces a wide variety of ingredients, including rice, vegetables, fruit and livestock products, all nurtured by its rich natural environment.
However, their full value cannot be realized without a system that connects producers with restaurants, local residents and visitors.
Zao Shokudo seeks to become more than a restaurant that simply purchases and serves local ingredients. We will learn about their characteristics, preparation methods and preservation techniques directly from farmers, transform that knowledge into dishes and share them with both the community and travelers.
Transforming a Vacant Restaurant into a Community Hub
Zao Shokudo is being created through the renovation of a vacant restaurant located along the prefectural road in the Kozumazaka area of Zao Town.
Rather than demolishing a building that is no longer in use, we are giving it a renewed purpose as a place where people can gather.
The renovated space will use local produce, create employment and provide a table around which residents and visitors can come together.
The regeneration of one building can connect agriculture, food service, employment, tourism and community interaction, creating a new cycle of value within the region.
Turning Local Production and Consumption into a Regional Economic Cycle
The value of local production for local consumption extends beyond enjoying fresh ingredients grown nearby.
When local restaurants use locally produced food and residents and travelers enjoy it as a meal, their spending supports the income of local producers. This activity can then expand into restaurant employment, new product development and interaction between visitors and residents.
Produce that may be difficult to distribute through conventional channels because of its size, shape or harvest volume can also gain new value when transformed into pickles, side dishes or seasoned rice.
Using agricultural products without waste contributes not only to reducing food loss, but also to supporting local farming and building a sustainable regional food system.
Making Agriculture-Welfare Collaboration Part of Everyday Life
The Zao Welfare Forest Initiative promoted by GAIA Group seeks to create:
“A community where everyone can live with peace of mind”
and
“A society where everyone can have a meaningful role within the community.”
In addition to working with local farmers, Zao Shokudo will develop opportunities that connect agriculture and welfare, including food processing and employment within the restaurant.
People grow the ingredients, transport them, prepare them, serve them and enjoy them.
By connecting these different roles around the dining table, an everyday restaurant can become a place that supports both community welfare and the regional economy.
Becoming “A Place Where People Connect through Zao”
The concept of Zao Shokudo is:
“A place where people connect through Zao.”
We aim to create a welcoming place where local residents, farmers, welfare organizations, villa owners, newcomers, local workers and guests staying at GAIA Resort can meet naturally through food.
For travelers, tasting dishes made with local ingredients is also an important opportunity to experience the everyday life and culture of the destination.
Our role does not end with serving a meal. We want to communicate the stories of the producers behind each dish, the changing seasons of the region and the lives of the people who call Zao home.
Zao Shokudo will grow as a community hub connecting the region with its visitors.
Grand Opening on September 1
Zao Shokudo will celebrate its grand opening on September 1, 2026.
- Location: Along the prefectural road in the Kozumazaka area of Zao Town
- Lunch hours: 11:00 a.m.–3:00 p.m.
- Lunch last order: 2:30 p.m.
- Dinner hours: 5:00 p.m.–11:00 p.m.
- Dinner last order: 10:00 p.m.
- Closed: No regular closing day
Set meals featuring local ingredients will be served during the day, while an izakaya-style menu will be available in the evening.
We will continue developing seasonal dishes that express the flavors of Zao while valuing the ideas shared by local farmers.
A Restaurant to Be Grown Together with the Community
Zao Shokudo is not intended to be a finished restaurant presented to the community. It is a place that will continue to grow by listening to and incorporating the voices of local people.
